Cook chayote in boiling water, let them cool. Peel and cut into thick slices. Separately, mix the egg yolks, flour, baking powder, salt, pepper and
oil and add slowly the warm water. Beat all the ingredients well to form a
smooth paste, avoiding lumps. Then add the beaten egg whites. In this mixture pass chayote slices, fry in hot oil one at a time, and garnish with parsley.
